Wham Bam Thank you Yam!

L’shana Tovah!  I hope everyone has wonderfully sweet new year!  One of the Traditional foods that I love to eat during the holidays is Kugel.  Normally, you see it made with egg noodles, lots of heavy creamy goodness, and holy moly is it amazing.

It can be savory or sweet.  If it is sweet, you will often see it with apples, raisins, sometimes even pineapple.  If it is savory you will see it with potato and maybe even spinach.  Regardless of what’s in it, it’s like a heavy noodle casserole of delicious goodness.

I have my own take on kugel.  I normally make it in a casserole dish and it always comes out super amazing.  This year I decided to make individual sized ones in cupcake holders.  They came out as a cross between a kugel and crumble and it was still super delish!

Ingredients:

  • 1 big white yam
  • 1-2 Asian pears
  • 1 cup almond meal
  • 1.5 cups unsweetened shredded coconut
  • 1 cup hemp seeds
  • 1 cup raisins
  • 1 cup pecans
  • 1/4 cup softened unsweetened organic coconut cream
  • 3/4 cup melted coconut oil
  • 2 tsp vanilla extract
  • cinnamon to taste
  • 3 tbsp flax meal

 

Directions:

With a mandolin, slice the pears and yams into a bowl.

In a separate bowl, combine the rest of the ingredients to make the crumble and mix well.

Layer in parchment paper muffin holders starting with the fruit/yam and finish with the crumble.  Bake for 20 minutes on 350.
