Feel Good Chicken Soup

 

I hope everyone had a wonderful weekend!  This weekend we got to celebrate my husband’s 40th birthday!  It was soooooo much fun and he was over the moon with all the love and festivities!

With our hectic schedules we don’t get to let our hair down as often as we would like to. With that being said, When I woke up Sunday morning, I knew it was time to get a pot of chicken soup going to help whip us back to tip top shape.

40 was soooo much fun!

Ingredients:

  • 2 tbsp of fresh chopped ginger
  • 1 sweet chopped onion
  • 2 tbsp of garlic
  • 3 tbsp of avocado oil
  • 2 tbsp of freshly chopped turmeric
  • 1 chopped bulb of fennel
  • 1 golden beet
  • 1 large chopped parsnip
  • 1.5 cup of organic peas
  • 3 chopped baby bok choy
  • 4 tbsp coconut aminos
  • 3 lbs of chicken (I use a mix of organic chicken thighs and organic chicken breasts)
  • Handful of fresh parsley
  • 5-7 grinds of Trader Joe’s South African Smoke Seasoning
  • 3 quarts of Pacific Chicken Bone Broth

 

Directions:

Throw everything into your pressure cooker on the soup setting for 1 hour.  If you don’t have a pressure cooker, use your crock pot for about 6 hours.

Chicken soup is the greatest remedy for breakfast, lunch and dinner!
